As Pittsburgh transplants, we are always looking for new and exciting weekend adventures. One of our favorite weekend spots is the Strip District, filled with lots of ethnic food joints and cute shops. The first stop on our trip last weekend was to the Pittsburgh Public Market which is filled with everything from produce vendors to handmade goods.

Shortly after we started shopping at Trader Joe’s, we found many websites and books geared towards their products. That’s where the idea for this recipe came from. This Couscous Fried Rice Bowl has become an easy go for us. The ingredients are simple and can be easily changed to incorporate whatever vegetables you have.
We are always looking for healthier versions of our favorite foods. Thanks to Knead to Cook we have a new way to make pizza. This recipe is very versatile, you can change the spices and cheese. This is starting to become a monthly staple in our house, this time I decided to use smoked gouda in the crust because we had some leftover from a quiche we made earlier this week.
1 medium-sized head of cauliflower washed and cut with most of the stems removed
3 cloves of garlic, minced
1/4 teaspoon of sea salt
1 teaspoon of dried basil
1/2 teaspoon of dried parsley
1/2 teaspoon of crushed red pepper
1/2 cup of grated reduced fat mozzarella cheese
1/4 cup of grated smoked gouda
