Israeli Couscous Bowl

Somedays work seems to go on forever, you get home and the last thing you want to do is cook dinner. We are always looking for quick recipes on the healthier side for nights like these. Shortly after we started shopping at Trader Joe’s, we found many websites and books geared towards their products. That’s where the idea for this recipe came from. This Couscous Fried Rice Bowl has become an easy go for us. The ingredients are simple and can be easily changed to incorporate whatever vegetables you have.

Ingredients:

1 cup of israeli couscous
2 cups of broccoli
1 cup shelled edamame
1/2 Tbsp olive oil
1 tsp sesame oil
2 eggs
1-2 cloves of garlic
1-2 tsp sambal oelek
1/2 cup of sliced green onion
1-2 Tbsp soy sauce

1. Cook the couscous according to the package instructions. Add the broccoli to the pot for the last 5 minutes to steam until both are done. Heat the edamame per the package instructions, if frozen typically they are boiled.

2. Heat the olive oil in a large wok (or non-stick skillet) on medium-high heat. Whisk the eggs and sesame oil together in a small bowl and then pour into the heated wok. Scramble the egg until set, about 30 seconds.

3. Add the garlic and sambal oelek to the pan mixing them in with the cooked eggs. Add the israeli couscous and broccoli to the wok, stir fry for about a minute. Add the cooked edamame, green onions and soy sauce to the pan, mix everything together.

4. Serve as a meal or a side dish. Additional soy sauce can be added along with sambal oelek and sesame seeds.
