This week we received our first share from our CSA Who Cooks for you Farm. We have been looking forward to the start for a few months now. This is the first year we have participated in a CSA and are already thankful we did. This week we received a nice variety of leafy greens and root vegetables.
We have always been good about planning our weekly meals out before going to the store. This has been extremely helpful when things get busy during the week. We rarely eat out because we always have delicious things planned! Having the CSA has created a new challenge, we have to come up with ideas to incorporate everything before our next share comes. Thankfully neither of us are picky eaters. Some of the ideas we came up with this week were:
We roasted our daikon radishes with some carrots and olive oil for 35 minutes at 350°.
We served them with some baked chicken and mixed grains.
We even found a used for the greens from the daikon radishes and salad turnips!
They were sautéed with a little olive oil, some onions, garlic, and sausage.
Other recipes planned for this week include; sesame salmon with bok choy, greek salad with turnips, and incorporating pea shoots with our lunch sandwiches. Neither of us are into dieting however we like to eat healthy and count our calories. We find planning our meals out helps stay on track.
