As I mentioned last week we have been planning ahead with our CSA share. This week the most unique ingredient we received were garlic scapes which are the upper part of the garlic plant. I was going to make some sort of quiche with them when we decided they would make a great pesto.
They are a very interesting looking plant, they are almost like curly green onions.
garlic scapes (we used 10)
2 cups of spinach
3/4 cup of parmesan cheese
3/4 cup of olive oil
1 tablespoon walnuts
salt and pepper to taste
1. Clean and slice the garlic scapes into 1/4 inch pieces. Add the scapes to the food processor along with the spinach, parmesan cheese, walnuts, and the olive oil. Pulse until smooth, season with salt and pepper.
We served our pesto over pasta, I am sure it would be delicious on bread, pizza, a sandwich or any other way you might use normal pesto. This recipe makes a fair amount of pesto, we froze some of it for a night we are looking for a quick mean. Another recipe we really enjoyed this week was Israeli Couscous with Swiss Chard. We will defiantly make both of these again soon!
